Incredibly Delicious Indian Recipe by Sajni Datwani - Seppankizhangu Fry

 Ingredients:

·          ½ tsp Turmeric powder
·         Salt – to taste
·         Asafoetida – a pinch
·         Curry leaves – a few
·         1 tbsp Tamarind water (Optional)
·         2 tbsp Oil for mixing and 2 tbsp for frying
·         Colocasia
·         2 tsp Sambar Powder
·         1/4 tsp Mustard seeds  

 How to Cook?

1.      First of all, boil the Colocasia in a pressure cooker for just 1 whistle & remove it from the heat.
2.      It won't be too soft but it will be boiled.
3.      Cut them to round shapes.
4.      After this, In a bowl, add sambar powder, turmeric powder, salt, oil and tamarind water and mix well with the Colocasia.
5.      Keep it to the side for 10 minutes.
6.      In a broad frying pan, add 2tbsp of oil.
7.      When the oil is heated, add asafoetida, curry leaves, mustard seeds.
8.      Add the Colocasia one by one (spread them in the pan separately that they won't stick to each other) and fry them in low flame.
9.      After 10 to 15 minutes, turn them to the other side.
10.  When they turn golden brown, remove them from heat.
11.  Serve hot with sambar/rasam or any variety rice.
