      Ingredients:
  •          Unpeeled Yukon Gold grated potatoes
  •          1 tbsp unsalted butter
  •        Thinly sliced 2 onions
  •       1 egg white
  •     1/2 tsp salt
  •   3/4 cup grated parmesan, divided 
  •        1/4 cup 35% cream, or milk 
  •      5 Eggs       
  •    2 garlic clove, minced 

       Method of Preparation:
  •          First of all, preheat oven to 400F. Brush a 9-in. pie plate with some oil.
  •          Place grated potato in a clean tea towel and squeeze out as much liquid as you can.
  •          After this, transfer to a bowl and stir in egg white and 1/4 tsp salt until combined.
  •          Now, press lightly onto bottom and sides of pie plate. Bake in center of oven until turn     golden brown for approx. 30-35 min.
  •         Melt butter in a large frying pan over medium-high.
  •         Now, add onions and cook, stirring often, until turned brown, about 10 min. Reduce heat to medium if they start to burn. Stir in peppers and garlic and cook for 2-3 more min.
  •          Now, remove from heat.
  •          Whisk four eggs with cream, 1/2 cup parmesan and remaining 1/4 tsp salt in a large bowl.
  •         Flavor with fresh pepper. Stir in onion mixture until combined properly. Scrape into warm potato crust.
  •          Lessen oven temperature to 350F. Bake in center of oven until quiche is set, about 30 min. Sprinkle quiche with remaining ¼ cup parmesan.
